Here's how to make them
First, take one cup of leftover rice and mix it with the mash of two boiled potatoes. Knead it well, just like you would for chapati dough, and add a little salt. For extra flavour and nutrition, throw in some chopped onions and carrots. Add chilli flakes and pepper for a bit of spice. Finally, mix in a quarter spoon of coriander powder and some cornflour. Now, take a small portion, flatten it, stuff a bit of mozzarella cheese in the middle, and roll it into a ball. Make sure you seal it properly so the cheese melts inside and doesn't ooze out while frying.
Next, in a separate bowl, mix maida (all-purpose flour) and cornflour with a pinch of salt and chilli powder. Add water to create a thin batter. Dip each rice ball into this batter, then coat it completely with breadcrumbs. Now, heat some oil in a pan on medium flame. Gently drop the prepared balls into the hot oil and fry them until they are golden brown. Your delicious rice potato cheese balls are ready! They're crunchy outside, soft and cheesy inside, and so tasty you'll want to make them again and again.
