How to make carrot and beetroot soup: Ingredients - 1 carrot, 1 beetroot, 1 tsp grated ginger, 1 tsp grated garlic, 1 tsp cumin seeds, Salt to taste, Black pepper powder to taste, Coriander leaves for garnishing, Few drops of lemon juice, 1 tbsp butterMethod: Step 1 - In a pressure cooker, heat butter and add cumin seeds. When the seeds begin to crackle, add ginger and garlic. Sauté till brown.Step 2- Add chopped carrot and beetroot along with some salt. Add around one glass water and let it pressure cook.Step 3 - When the cooked carrots and beetroot cool down, put them along with spices and water in a blender to make a smooth paste.Step 4 - Pour back the paste in a pan and heat it. Add black pepper powder and lemon juice, and serve after garnishing with coriander leaves.
