Sugar-Free Phirni for Eid: A Sweet Treat for Diabetes Patients

Ingredients:

  • Rice - 1/4 cup
  • Milk - 1 l
  • Cardamom powder - 1/2 tsp
  • Saffron - a few strands
  • Sugar substitute - (stevia, erythritol, etc.)
  • Finely chopped nuts - cashews, almonds, pistachios

Soak the rice and boil the milk

  • Wash the rice and soak it in water for 30 minutes. Then, grind the rice coarsely. 
  • Boil the milk in a heavy-bottomed pot. When the milk starts to boil, reduce the heat.

Add rice and cook

  • Add the ground rice to the milk and stir constantly to avoid lumps.
  • Cook the milk on low heat until the rice is cooked well (for 20-25 minutes) and the phirni thickens.

Enhance sweetness and aroma

Add the sugar substitute, cardamom powder, and saffron (if using). Mix well and cook for 2-3 minutes.

Cool and garnish

  • Let the phirni cool down. Then, garnish it with finely chopped nuts and serve chilled.

You can change the quantity and type of nuts according to your preference.

Special tips

  • To make the phirni more delicious, you can also add a few drops of rose water or kewra water.
  • If you want to thicken the phirni even more, you can add a little cornstarch to it.
