Ingredients to make spongy semolina dhokla
Semolina (rava) – 1 cup, Yogurt – ½ cup, Water – ½ cup, Turmeric powder – ¼ tsp, Salt – to taste, Oil – 1 tbsp, Eno or Baking soda – 1 tsp, Green chilies – 2, Ginger paste – ½ tsp

For tempering
Oil – 1 tbsp, Mustard seeds – 1 tsp, Curry leaves – 7-8, Green chilies (long slit) – 2, Sesame seeds – ½ tsp (optional), Lemon juice – 1 tbsp, Sugar – 1 tsp, Water – ½ cup

Prepare the semolina batter
In a bowl, mix semolina, yogurt, turmeric, salt, ginger paste and a little water well. Cover it and leave it for 15-20 minutes so that the semolina swells up.

Steam the dhokla
Now add 1 teaspoon of Eno or baking soda to the batter and mix gently. Immediately pour the batter into a greased dhokla mold and steam the dhokla on medium heat for 15-20 minutes.

Check the semolina dhokla
To check the semolina dhokla, insert a knife in the middle, if it comes out clean then the dhokla is ready.

Apply tempering
Heat oil in a pan, add mustard seeds, curry leaves, green chilies and sesame. Now add water, sugar and lemon juice to it and boil for 1 minute. Pour this tempering over the dhokla.

Serve semolina dhokla
Cut the dhokla into pieces and serve with green chutney or sweet chutney. You can make it even more delicious by sprinkling some coriander leaves and coconut on top.
