Ingredients

  • Leftover rice – 1 cup
  • Yogurt – 1 cup
  • Onion – 1
  • Ginger – ½ inch
  • Curry leaves – a few leaves
  • Mustard seeds – 1 teaspoon
  • Dry red chili – 1-2
  • Oil – 2 teaspoons
  • Salt – to taste

Soak the rice overnight

  • Take the leftover rice and add enough water to completely submerge it.
  • Leave it overnight (do not refrigerate).

Prepare the rice in the morning

  • In the morning, add yogurt to the rice and mash well with your hands.
  • Do not drain the rice water, it will enhance the flavor.

Add the spices

  • Add finely chopped onion, ginger, and curry leaves and mix well.

Prepare the tempering

  • Heat oil in a pan, then add mustard seeds and let them splutter. Now add dry red chilies and fry until lightly blackened.

Add the tempering and serve

Add the prepared tempering to the rice-yogurt mixture and mix well. Garnish with coriander leaves and serve chilled.
