Ingredients for Lauki Pudding

Lauki– 2 cups (grated), Milk- 500 ml, Ghee- 2 tbsp, Sugar- 1/2 cup, Cardamom powder- 1/2 tsp, Dry fruits- chopped (almonds, cashews, pistachios), Saffron- a few strands

Prepare the Lauki

Peel the lauki, remove the seeds and then grate it. Now squeeze it lightly so that the extra water comes out.

Roast in Ghee

Heat ghee in a pan and add grated lauki and fry on medium heat for 7-8 minutes, till its rawness goes away.

Add Milk and Cook

Now add milk and let it cook on medium heat. Cook it till the milk thickens a bit and the lauki melts well.
