The smell of wet earth after a spell of rain is truly amazing. However, no matter how appealing petrichor might be, nobody likes to step on the muddy roads punctuated with pools of dirty everywhere. The rain appears romantic only when you are watching it from the comfort of your home over some tasty, munchy snacks. So, we offer you some mouth-watering delicacies which are easy to cook at home and do not take a lot of time. Recipe 1:Russian Coxinha
Ingredients
- 2 eggs, slightly beaten
- 2 cups milk
- 1 tsp salt
- 1 1/2 cups sifted flour
- cottage cheese
- sour cream
Method
• Add milk to slightly beaten eggs. Beat thoroughly. Add flour and salt and stir well
• Fry 5-inch pancakes on a hot buttered griddle until brown on both sides
• Place a tablespoon of cottage cheese into the centre of each and roll the pancake over the cheese so that the sides overlap
• Turn and brown. Serve with sour cream

Recipe 2:Malpua Waffles
Ingredients:
• 1 cup All Purpose Flour
• 1 tsp Baking Soda
• ½ cup Khoya
• 1 tbsp Butter
• 250ml Milk
• 1 cup Sugar
• Pinch of Kesar
• Pinch of Cardamom Powder
Method:
• In a large mixing bowl add all-purpose flour, baking soda, khoya and butter. Start mixing it while adding milk to it
• Heat the waffle maker and coat it with butter. Pour the mixture in it and let it cook till it’s crisp and golden in colour
• To make Sugar syrup: In a pan put one cup of water then add sugar. Now add kesar and let it cook. Now add cardamom powder to it and mix well
• Serve the waffles hot and dripping with sugar syrup. Garnish with dry fruits
